Watermelon BBQ Sauce

Ingredients
  

  • 2 cups watermelon diced
  • 1/3 cup balsamic vinegar
  • 1/3 cup apple cider vinegar
  • 1/3 cup brown sugar packed
  • 1/3 cup soy sauce
  • 4 Tbsp olive oil
  • 4 Tbsp dijon mustard
  • 4 cloves garlic minced
  • 6 ounces tomato paste

Instructions
 

  • Add all ingredients together in a saucepan. Bring to a boil over medium heat and then reduce to a low simmer.  Stir occasionally.  Let simmer for 30 minutes.  Then take a stick blender and blend until smooth.
  • Keep warm for use or refrigerate. The sauce keeps for 1 week under refrigeration.
  • This sauce is a great accompaniment to chicken, pork, or beef.
