Watermelon BBQ Sauce
Ingredients
- cups watermelon diced
- 1/3 cup balsamic vinegar
- 1/3 cup apple cider vinegar
- 1/3 cup light brown sugar packed
- 1/3 cup soy sauce
- 4 Tbsp olive oil
- 4 Tbsp dijon mustard
- 4 cloves garlic minced
- 6 ounces tomato paste
Instructions
- Remove from heat. Using a stick blender, blend until smooth. If you don’t have a stick blender, place sauce in a stand-up blender. Cover the top with a towel (so you don’t get burned by any splashes), and blend on low for 5-10 seconds. Stir and blend on medium until smooth.
- Keep warm for use or refrigerate. The sauce keeps for 1 week under refrigeration.
- This sauce is a great accompaniment to chicken, pork, or beef.
