Watermelon BBQ Sauce

Watermelon BBQ Sauce

Ingredients
  

  • cups watermelon diced
  • 1/3 cup balsamic vinegar
  • 1/3 cup apple cider vinegar
  • 1/3 cup light brown sugar packed
  • 1/3 cup soy sauce
  • 4 Tbsp olive oil
  • 4 Tbsp dijon mustard
  • 4 cloves garlic minced
  • 6 ounces tomato paste

Instructions
 

  • Remove from heat. Using a stick blender, blend until smooth. If you don’t have a stick blender, place sauce in a stand-up blender. Cover the top with a towel (so you don’t get burned by any splashes), and blend on low for 5-10 seconds. Stir and blend on medium until smooth.
  • Keep warm for use or refrigerate. The sauce keeps for 1 week under refrigeration.
  • This sauce is a great accompaniment to chicken, pork, or beef.
