  • 1 cup wild rice
  • 4 cups vegetable stock
  • 4 tablespoons butter
  • 1 lb. Crimini mushrooms, sliced
  • 1/2 lb. Shitake mushrooms, diced
  • 1 medium yellow onion, diced
  • 1 teaspoon tomato paste
  • 5 ounces dry sherry
  • 7 cups chicken stock
  • 1/4 cup cornstarch
  • 1/2 cup whipping cream
