Ingredients:

  • 4 cups arugula, washed and dried
  • 4 cups kale, washed, dried, ribs removed and cut chiffonade*
  • 1 cup pure pomegranate juice
  • 2 tablespoons fresh lemon juice
  • Zest from 1/2 lemon
  • 2 teaspoons freshly grated ginger
  • 1 shallot, peeled and minced fine
  • 4 tablespoons extra virgin olive oil
  • Fresh ground black pepper and kosher salt
  • 3 pears, washed and stems removed
  • 1 cup fresh pomegranate seeds
  • 1 cup shelled pistachios
