Holiday Cranberry Shortcake

Ingredients:

  • 2 cups apple juice
  • 2 cups tawny port
  • 1/2 cup sugar
  • 1 rosemary sprig
  • 2 cups quince, peeled and diced
  • 1 cup fresh cranberries

For the Shortcakes

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 tablespoons evaporated cane juice
  • 1/2 cup sour cream
  • 2 tablespoons half and half
  • 1 large egg
  • 4 ounces butter, melted and cooled slightly
