Watermelon Mint Mocktail
Servings: 1
- 2 mint leaves, plus more for garnish
- Ice
- ¾ cup watermelon juice (see Tip)
- ½ cup club soda
- Watermelon slice for garnish
Directions
Mash mint leaves in the bottom of a large cocktail or pint glass with a muddler or small wooden spoon. Fill the glass one-third full with ice, add watermelon juice. Top with club soda and garnish with watermelon slice and more mint leaves, if desired.
Virgin Layered Strawberry-Mango Margaritas
Servings: 6
- 3 cups frozen strawberries
- 3 cups ice, divided
- 1 cup water, divided
- 2/3 cup lime juice, divided
- ½ cup orange juice, divided
- ¼ cup simple syrup (see Tip), divided
- 3 cups frozen mango chunks
Directions
Step 1
Place strawberries, 1 ½ cups ice, ½ cup water, 1/3 cup lime juice, ¼ cup orange juice, and 2 tablespoons simple syrup in a blender. Purée until smooth. Transfer to a pitcher or bowl.
Step 2
Rinse out the blender jar. Place mango and the remaining 1 ½ cups ice, ½ cup water, 1/3 cup lime juice, ¼ cup orange juice and 2 tablespoons simple syrup in a blender. Purée until smooth.
Step 3
Decoratively layer the two margaritas into 6 glasses. Leave the layers distinct or partially stir together for a swirled design.
Tip: To make your own simple syrup: Bring 1 cup sugar and 1 cup water to a boil in a medium saucepan, stirring frequently to dissolve the sugar. Let cool for 30 minutes and then refrigerate until cold, at least 1 hour.
