Chef Seann’s Molasses Spice Cookies
2 1⁄4 cups all-purpose flour
1 teaspoon baking soda
1 1⁄2 tablespoon ground cinnamon
1 1⁄2 tablespoon ground ginger
1⁄2 teaspoon ground cloves
1⁄4 teaspoon ground allspice
1⁄4 t teaspoon ground nutmeg
1⁄4 teaspoon ground black pepper
1⁄4 teaspoon salt
1 1⁄2 sticks (6 oz.) unsalted butter, softened
1/3 cup brown sugar
1/3 cup granulated sugar
1 large egg yolk
1 tsp vanilla extract
1⁄2 cup molasses Zest of one orange
1⁄2 cup coarse or sanding sugar
Preheat oven to 375 degrees.
Prepare a baking sheet with parchment paper or spray with a non-stick spray. Whisk together the flour, baking soda, spices and salt into a medium bowl.
Using an electric mixer, beat the butter, brown sugar, and granulated sugar for about three minutes or until the mixture is light and fluffy.
Mix in the egg yolk, vanilla and molasses and beat for another 2 minutes. Make sure to scrape the sides of the bowl so that all of the mixture incorpo- rates completely.
Add the dry ingredients to the butter mixture and beat until fully incorporated. Mix the orange zest into the coarse sugar.
Roll out the dough and shape into a 1 1⁄2 inch balls. Roll balls in orange and sugar mixture.
Bake at 375 degrees for about 11 minutes or until browned and the edges have begun to set. Do not overcook.
