Chef Seann’s Molasses Spice Cookies
Ingredients:
- 2 1⁄4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1⁄2 tablespoon ground cinnamon
- 1 1⁄2 tablespoon ground ginger
- 1⁄2 teaspoon ground cloves
- 1⁄4 teaspoon ground allspice
- 1⁄4 t teaspoon ground nutmeg
- 1⁄4 teaspoon ground black pepper
- 1⁄4 teaspoon salt
- 1 1⁄2 sticks (6 oz.) unsalted butter, softened
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 1 large egg yolk
- 1 tsp vanilla extract
- 1⁄2 cup molasses Zest of one orange
- 1⁄2 cup coarse or sanding sugar
Getting it done:
- Preheat oven to 375 degrees.
- Prepare a baking sheet with parchment paper or spray with a non-stick spray. Whisk together the flour, baking soda, spices and salt into a medium bowl. Using an electric mixer, beat the butter, brown sugar, and granulated sugar for about three minutes or until the mixture is light and fluffy.
- Mix in the egg yolk, vanilla and molasses and beat for another 2 minutes. Make sure to scrape the sides of the bowl so that all of the mixture incorpo- rates completely.
- Add the dry ingredients to the butter mixture and beat until fully incorporated. Mix the orange zest into the coarse sugar.
- Roll out the dough and shape into a 1 1⁄2 inch balls. Roll balls in orange and sugar mixture.
- Bake at 375 degrees for about 11 minutes or until browned and the edges have begun to set. Do not overcook.
