In June 2024, the government of Denmark, in collaboration with environmental groups and agriculture industry, reached a historic Green Tripartite Agreement aimed at transforming the countries agriculture into a more regenerative and greener food system. Key components include:

  1. The world’s first carbon tax on livestock emissions.
  2. Designating 618,000 acres of new forest and enhanced biodiversity
  3. Paying farmers to reduce nitrogen pollution.

Studies have shown that approximately 50% of Denmark’s agricultural greenhouse gas emissions come from methane, a byproduct of cow “burps,” manure, and from nitrogen fertilizer applied to soils; practices which have been shown to pollute air, water and increase climate change.

“Nature, the climate and good farming practice will all be winners when we replace outdated water environment initiatives with new approaches,” says the Danish Agriculture & Food Council.

Epicurean Group applauds all work toward a more regenerative food system. For decades, we have been dedicated to Fresh. Honest. Local, preferring ingredients from family farms, in-season produce, and transparency about where food comes from. Our Clean 15 and Dirty Dozen program reduces use of pesticides and fertilizers in the produce we buy, while increasing organic options AND improving your bottom line. Our partnerships with local farms and product manufacturers have supported and promoted proven climate-smart solutions within agriculture and food service for over twenty years.

And this includes food waste. In the United States, estimates show we throw away 30-40 percent of the food supply, wasting precious resources of land, water and energy in the process. Using the latest advancements in tech, Epicurean Group studies customer preference, sales and POS trends to quickly adjust quantity needs and purchasing. If we do have leftovers, community groups such as Food Runners and Second Harvest Food Bank of Northern CA distribute extra meals to needy folks rather than the landfill.

Want to regenerate your eating style? Here’s three ways to start:

1.     Prioritize Plant-Based Foods | Embrace Meatless Mondays

Ease into new habits by designating 1-2 plant-based days per week.

  1. Choose Local and Seasonal Foods

Support farmers’ markets and community-supported agricultural (CSA) programs.

Eat in Season: It’s fresher, often cheaper, and requires fewer resources compared to out-of-season options that rely on energy-intensive greenhouses or imports.

  1. Minimize Food Waste

Use What You Buy: Plan meals around what’s already in your kitchen.

Preserve Foods: Freeze, pickle, or dehydrate foods that might go bad before you can use them.
